Pink Billy Saignee



Pink Billy is made from the free run juice extracted from a sample of grapes collected across our sorting table.  The berries were selected on weight and colour.  Merlot forms 50% of the blend while shiraz and Cabernet Franc make up the balance equally.  Pink Billy Saignee is light Salmon pink in colour, with aromas of strong berry fruit characters.  The flavour is creamy and soft with excellent texture married with subtle but powerful fruit characters.  It is dry and savoury without being astringent, showing off great length of flavour.

Winemaking Notes
A saignée is a partial bleed of juice from the fruit. The juice is managed oxidatively to stabilize colour and drop out any unstable tannins.
The juice is racked off heavy solids, and ferment by indigenous yeast. 15% goes to older oak for fermentation.
Following primary ferment the wine is left to mature on yeast lees with regular battonage until bottling with to increase texture and body.

Winemakers Tasting Notes
Pink Billy is pale pink salmon. Bright and fresh; a particularly complex dry rose with enticing ripe berry driving both palate and bouquet.
Softly textured, lovely fruit weight and depth of flavour along with a savoury finish makes this an incredibly moreish wine.
Pink Billy 2017 is a Saignée made predominantly of Merlot (35.5%) and Syrah (35.5%) along with smaller portions of Cabernet Franc (22%) and Pinot noir (6%).
