N.V. Sparkling Chardonnay Pinot Noir - Edinburgh

TO CONFRONT TRADITION YOU REQUIRE A BIG DOSE OF IMAGINATION. EDINBURGH - OUR HOUSE.

The high altitude, age and aspect of Orange and in particular the Koomooloo vineyard has ideal conditions for producing a sparkling of great complexity. We are very excited to launch our first sparkling using Méthode Traditionelle; which is the old world method used in Champagne, it truly is the effervescence of superiority.

THE No. SERIES

No. 19 Sauvignon Blanc 2011

Our No.19 has a lively colour; light, bright straw with hints of green which gives an indication of the aroma. Typical of Sauvignon Blanc, fresh fruit jumps from the glass with passionfruit, florals and minerals. The flavour in the mouth follows suit with ripe varietal flavours a fine texture, lovely weight, intensity and length. Classic and fresh, yet complex.

No.11 Chardonnay 2011

No.11 displays a light, bright straw colour with a green hue which is a sign of youth. The aroma is very youthful with citrus and white peach characters and some subtle oak. The crisp flavours from the full of vibrant varietal characters, give way to a wine with great mid-palate softness. The integrated oak adds texture to deliver a fineness that is long and clean. Drink to 2018.

Pink Billy Saignee 2011

Pink Billy is made from the free run juice extracted from a sample of grapes collected across our sorting table. The berries where selected on weight and colour. Merlot (mainly being the larger berry) forms 50% of the blend, while Shiraz and Cabernet Franc make up the balance equally. Pink Billy Saignee is light salmon pink in colour, with aromas of strong berry fruit characters. The flavour is creamy and soft with excellent texture married with subtle but powerful fruit characters. It is dry and savoury without being astringent, showing off a great length of flavour.

No. 17 Merlot Cabernet Franc Cabernet 2009

No. 17 2009 is 50% Merlot, 40% Cabernet Franc and 10% Cabernet Sauvignon. The mature vines are giving low yield, balanced crops of fruit with intense flavours. The components for this wine were made separately and blended after being in barrel for 24 months. This wine has a deep brick red colour and from the first sniff, the aroma of lifted red fruit characters jumps out of the glass. The flavour is very bright, ripe and intense with oak in support. The blend is seamless and smooth; rich elegant fruit in the mid-palate with great structure; blackcurrant character on the finish; excellent length.

Tasting Notes

No. 5 Cabernet Sauvignon 2009

No. 5 is mostly Cabernet Sauvignon with 5% Merlot . This high quality wine highlights the impressive relationship between these varieties and the Orange region. Our Cab Sauv displays intense bright reds with a small purple hue. The aroma shows bright varietal black berry fruit characters with subtle cigar box oak. The intensity of the Cabernet Sauvignon’s fruit dominates at this stage and provides ongoing flavours. Providing the wine is well cellared, it will further develop, intensify and gain complexity over an extremely long period - up to 50 years.

Tasting Notes

No. 89 Shiraz 2009

The fruit used for No.89 is from the 20 year old vines that exhibit powerful spices and peppery flavours – a representation of a classic cool area Shiraz. The oak adds complexity, but the intense fruit restrains and helps harmonise. The flavours are vibrant and follow the aroma of spicy fruit characters. There is 1% Viognier co-fermented in this wine and it contributes a very subtle softening of the cool climate spice. Soft fine tannins combine with great length of flavour to give a wine of youth that will repay cellaring.

THE CHARACTER SERIES

The Architect Chardonnay 2011

Fruit for The Architect comes from our younger vines planted in 1995. This Chardonnay displays an excellent light medium colour with a hint of green and an aroma that is bright with hints of honey. The Architect is not overtly fruity and its time on lees and in old barrels for around 6 months has given a subtle elegant fruit character with fine texture.

The Dreamer Viognier 2010

Originating from the northern part of Rhone in France, Viognier has extremely individual characteristics; dry, powerful, spicy and reminiscent of dried apricots when picked ripe. The Dreamer is light in colour with hints of green, its aromatics are bright and spicy fruit characters. The flavours are of light fresh fruit, obvious acid but with elegant long spice and a touch of pepper.

Pinot Noir is still a relatively new variety for the Orange region, but it is showing excellent promise in this cool, mountainous, continental climate. 2010 Wire Walker displays a seductive light bright crimson colour, combined with the aroma having a great lift of bright fruit followed by a matrix of complex layering. This wine has great personality with varietal fruit presence and savoury texture.

Merlot is well suited to the cool climate conditions of the Orange region, producing consistent crops of high quality fruit in the Koomooloo vineyard. The Conductor wears a medium colour with a bright red hue and smells of rich clear berry fruits. The Idiot Shiraz 2011

Shiraz from Orange is quite unique in style compared to most other regions in Australia and is more reminiscent of the Northern Rhone, France. Our Idiot Shiraz is a young wine that has a lovely colour – deep red with some purple hues. The aroma is spicy, lifted and intense. There is an appealing liquorice character to the intense fruit aromas. Bright full fruit flavours in a medium-bodied package; classic cool area shiraz – some spice integrated with red fruits; lovely soft tannins and finish.
